This is my mother’s recipe. She bakes it all the time, and now I do, too. It is wonderfully moist, and seems almost to make itself.
12 oz/ 350 g mixed dried fruit
8 fl oz/ 250 ml cold tea
3 oz/ 85 g sugar
1 large/ 2 small eggs
8 oz/ 225 g plain flour and 1 1/2 tsp baking powder, OR
8 oz/ 225 g self raising flour
1 tsp cinnamon or mixed spice, if you like
Mix the fruit, sugar and tea together, and leave to soak overnight.
Add the egg(s), flour, and baking powder and spice, if using. Bake in a low-medium oven until a skewer, inserted into the middle, comes out clean. This can take an hour or more.
Leave to cool before slicing. You can enjoy this as it is, but I like it best spread thickly with butter.
